200g Mortons Plain Flour
150g Caster Sugar
4 Eggs Beaten
2 tbsp Baking Powder
Pinch of Salt
1 Lemon (Grated Rind)
Caster Sugar for Dredging
Fat for Greasing
Pre-heat the oven to 180°C/350°F/Gas Mark 4.
Lightly grease and line a 15cm (6in.) round cake tin.
In a mixing bowl cream the butter with the sugar until light and fluffy. Gradually add the eggs, beating well as you add.
Sift the flour, baking powder and salt together into a second bowl, then fold into the creamed mixture. Stir in the lemon rind and mix well. Spoon into the prepared cake tin and dredge the top with caster sugar.
Bake for 55-60 minutes or until cooked through and firm to the touch.
Cool on a wire rack.
