Mortons Christmas Fruit Cake
125g Mortons Plain Flour
125g Mortons Self Raising Flour
1kg Mixed Dried Fruit
1 Orange Rind (Grated)
165g Dark Brown Soft Sugar
1 tsp Mixed Spice
125ml Pure Orange Juice
2 tbsp Marmalade
2 Large Eggs
Preheat the oven to 160 C/ 320 F/ Gas 2.5
Line the base of a 20cm cake tin with 2 layers of newspaper. Then line the bottom and sides with baking parchment. The baking parchment should come up higher than the top of the tin.
Put the fruit, butter, mixed spice, cherries, orange rind, sugar, brandy and marmalade into a large pan and heat until boiling. Simmer for 3 minutes. Let cool.
Stir the eggs and Mortons Plain and Self Raising Flours into the cooled mixture.
Pour into the prepared tin. Bake in preheated oven for 2 hours.
Cool on a wire rack.
