- Preheat the oven to 180°C or Gas Mark 4. Mix the cranberries, zest & juice of the orange in a bowl and heat in the microwave for 2 minutes.
- In a mixing bowl, whisk the eggs and sugar to a thick foam, continue to whisk while gradually drizzling in the oil.
- Mix the flour, mixed spice, carrot and nuts in a separate bowl. Fold in the foam and cranberry mixtures to form a thick batter. Bake in a greased 2lb loaf tin for 35 minutes.
- Melt the chocolate and beat in the cream cheese. Spread across the top of the cooled cake and lightly dust with mixed spice.
