- Preheat the oven to 170°C or Gas Mark 4.
- Cream the butter and sugar together until pale and creamy, then add in the vanilla extract and mix. Add the sieved flour, salt and the chocolate chips and gently mix into a paste before turning out onto baking paper.
- Shape the dough into a 3cm thick log and wrap the log in the baking paper and chill in the fridge for 30 minutes.
- Cut the log into 1cm thick cookies using a sharp knife and place onto a lined baking tray. Bake for 15 minutes or until lightly golden. Dust with icing sugar immediately and allow to cool for a few minutes to become firm.
