Recipe Type: Muffins
Yield: 10 muffins
Method
- Preheat oven to 180°C, 350F Gas Mark 4.
- Grease each muffin pit with softened butter.
- Mix the fruit with the orange zest and juice in a large bowl. Microwave for 1 minute to plump them up.
- Using a big spoon, mix in the oil, eggs, chopped nuts, sugar, flour, salt, mixed spice, and ¾ of the apple until it forms a batter.
- Pour into ten muffin pits. Add the remaining chopped apple on top, peel side upwards, and bake for 20 minutes until muffins are golden.

200g Mortons Wheaten Bread Mix
50g cranberries, raisins or mixed dried fruit
Zest and juice of 1 orange
100 ml vegetable oil
2 apples skin on, chopped roughly
50g toasted chopped nuts (optional)
50g caster sugar
Generous pinch of salt
3 tsp mixed spice
2 eggs, beaten
