We think it would be rude not to share our popular and oh so delicious G&T cupcake recipe.
These cupcakes are surprisingly easy to bake and pack quite the gin punch. Without further ado, here is the recipe for your G&T fulled dreams…
Ingredients
200g Mortons Self-Raising Flour
200g Unsalted butter at room temp
200g Caster sugar
3 Medium free range eggs
Zest & juice of 2 limes
75ml of gin – we love Gunpowder or Shortcross
Syrup
50g Caster sugar
50ml Tonic water – we love Poachers or Fevertree
3tbsp Gin
Buttercream (best bit!)
200g Unsalted butter at room temp
460g Icing sugar
4tbsp Gin
Zest & Juice of 1 Lime
Method:
- Pre-heat the oven to 180C/ Gas Mark 4 and prepare the muffin tin with cupcake cases.
- In a large mixing bowl cream the butter and sugar until pale and creamy in texture. Add in the eggs slowly and gradually, beating well until combined (Tip: try beating the eggs before they are added to the mixture if beating by hand!)
- Sieve the flour into the bowl and fold into the mixture followed by the lime zest, juice and the gin. Mix until all ingredients are combined into a batter.
- Spoon the batter into the prepared muffin tin and bake in the oven for 25 minutes or until golden brown and a skewer inserted comes out clean.
- While the cupcakes are baking, prepare the syrup mixture. Place the tonic water in a saucepan and place over a low to medium heat. Add in the sugar and stir until it is dissolved. Increase the heat until the mixture is bubbling and add in the gin. Remove after roughly 1 minute and allow to cool.
- When the cupcakes are done, leave them in the muffin tin and, using a skewer, pierce small holes along the top of each cupcake. Brush or carefully pour the syrup over the cupcakes, ensuring the syrup is being absorbed. Remove from the muffin tin and allow to cool.
- Whilst the cupcakes are cooling make a start on the buttercream. Sieve the icing sugar into a medium sized mixing bowl and add in the lime zest. Add in the butter and beat together until pale and creamy in texture. Slowly add in the gin and lime juice, mixing together.
- Spoon or pipe the buttercream onto the cooled cupcakes, place a quarter lime piece on top with a paper straw and serve to your favourite gin enthusiasts.
