2 Large Eggs
200 ml (7 fl.oz.) Semi Skimmed Milk
85 ml (3 fl.oz.) Water
Pinch of Salt
1 Lemon (Juiced)
Caster Sugar (to sprinkle)
In a medium sized mixing bowl add the flour and create a small hollow in the middle.
Crack both eggs into the bowl and roughly whisk the mixture together until the batter is mixed and looks sticky.
Add the milk slowly and continue to whisk until all the milk has been mixed in and the batter appears smooth and free of lumps. (Tip: whisking the batter when it is firmer and before all the milk is added creates a smoother mix!)
Finally add in the rock salt and give the batter a quick mix. Leave the batter to sit until the air bubbles have disappeared and been released from the batter.
Put a generous dollop of butter into a heavy based skillet or frying pan to grease and pour in half a cup of the batter.
Fry on each side for approximately 2 minutes each and serve with some butter, lemon juice and a dusting of sugar.
